Matt's Breakfast Casserole
MATT’S BREAKFAST CASSEROLE
INGREDIENTS
-10 eggs
-1/2 c egg whites
-1/4 cup milk
-1 tbsp pancake mix (we use kodiak for extra protein)
-whatever veggies you have going bad in your fridge (we did jalapeño & garlic)
-breakfast meat of choice (we did ground sausage)
-1/4 c shredded cheese
-seasonings of choice (we did S&P, garlic powder, slap yo mama)
HOW TO:
-preheat oven 425F
-start browning your meat of choice. If you want to cook in the same pan, make sure it’s oven safe. When it’s halfway cooked, add in veggies to slightly cook
-in a bowl, whisk eggs, milk, pancake mix, seasonings
-pour over meat/veggies
-sprinkle cheese and we added some chives
-cook for 30-35 mins until top is browned and a a fork comes out clean
-ENJOY!
