INGREDIENTS:
-1 box Jiffy Cornbread mix
-1 cup sour cream or greek yogurt
-1 stick melted butter (can sub coconut oil but will add a slight coconut taste)
-1 can of creamed corn
-1 can of drained corn kernels
-2 beaten eggs
-optional add ins:
-chopped jalapeños
-chopped green onions
-shredded cheddar cheese
-diced cooked andouille sausage
HOW TO:
-preheat oven 350F
-combine all ingredients in a bowl (allow butter to cool before adding so it doesn’t scramble the eggs)
-spray a 9x12 baking dish and add in batter
-place in oven for 50-55 mins until golden brown and a fork comes out clean
-if you want to add cheese on top, remove for the last 5 mins, add cheese, then put back in on broil for a couple mins to crisp up (but make sure to watch so it doesn’t burn)
-ENJOY!
NOTES:
-if you don’t like spice, you can omit the jalapeños all together or use green onions instead. And instead of hot honey, use regular honey or omit!
